I have been learning so much about chillies from Mexicans, fellow food lovers and general chilli nuts that I thought it would be a fun, if slightly mad-capped idea to publish someone’s best ever Mexican recipe which uses chilli in my cookbook, ‘Mexican Food Made Simple’ , due out next April.

The idea is that anyone out there in cyberspace sends me their favourite Mexican recipe using chilli.  The recipe has to be easy to follow, not too complicated and use ingredients that you can get in the UK (even if that means sending off for a Mexican chilli by mail order).  If the recipe is good enough, the winning recipe goes into my book (as judged by Hodder, my publisher, some mystery chefs and me), whilst if there is a runner-up, they will be published in Wahaca’s “Ola London”, which we hand out to 10,000 people a week at Wahaca and several hundred journalists.

For all the cynics out there, I have now written most of my book which has to be handed in by the beginning of September, so time is of the essence!  If you are keen, send recipes to loswahacos@wahaca.co.uk before 4th September.

I am waiting with baited breath to see recipes!  Let’s start the British Chilli Revolution here!

@Tashie – Thanks so much for the comment. It’s very exciting… but a lot of hard work. Do you fancy submitting a recipe?

@Michelle – The green salsa is very popular. We’ll see if we can write a post about it on the blog in the near future.

I am praying that a recipe for the slow cooked pork pibil is going to be in the book. Seriously, I have dreams about this dish! Love your restaurant- been several times but would love to know how to cook it.

habenero chilis are hot but if you like martini,s take a snipe off one,place on toothpick and place in the drink size of a dime the chili flares up the martini and you can nibble on the chili on the toothpick the liquor in the drink keeps your mouth warm but not firey,its called the FLAME of LOVE martini,scotch bonnet is like the habenero from havana cuba,…from phil in palm springs usa. mexican food is fab so are people your goin to like it… good luck with the book

@Mark – Sorry, we missed your comment. We love Tommi’s pork pibil recipe too. It’s a cracker. The recipe is likely to be in Tommi’s book. But we can see if we can organise some recipe testing if you are interested.

HI this is phil,its ok with me if you want to enter it,win or lose its tasty do what you wish,the FLAME OF LOVE HAS been drunk by many famous people one of them was,CANTIFLAX,the actor in around the world in 80 days,he was mexican,and dean martin gassed up on them often good luck what ever happens mexican food is great,and so easy to prepare and with tommies recipes,OLE

when we talk of chilies do we mean the hot peppers that go into mexican food.OR do we mean the dish called CHILI which is texan,an american dish, now some times it has mexican chilies in it,and they call that tex/mex,but mexican food is not known for the dish called CHILI,its texan its very easy to make and it does,nt have to BE hot,it is, the flavour of the chili powder that gives it the name,all chilies are not hot,like green bell pepper is a chili but is,nt hot you will not find it on a mexican menu, it is serve as a bowl of chili,mostly with diced onions and cheddah cheese on the side,its made of pork and beef if you widh some people make turkey white chilli,I have a recipe if anyone would like it cheers
