		<description>Hi Susan, like you we&#039;ve searched high and low, but haven&#039;t been able to find Queso Oaxaca over here anywhere.  The good news is you can get a string cheese made by the same process in good Middle Eastern shops.  It is not clear if the Arabs took the method to Oaxaca, or discovered it in Oaxaca and took it back to the Middle East, but you&#039;ll see they are quite similar.  It is often flavoured with caraway seeds and can be quite salty so you do need to soak it in water before shredding and using in quesadillas.
