A little information on Mezcal
Heralded as the “elixir of the Gods” Mezcal is the best kept secret to be smuggled out of the Americas in the last 20 years.  Mezcal comes from the maguey or agave plant which is grown mainly in Oaxaca.  There is a saying in Oaxaca “para todo mal, mezcal…y para todo bien tambien” (for everything bad there is Mezcal…and also for everything good).  Mezcal has a wonderful smoky/ peaty texture to rival the best Scottish Malts. The flavour comes from the agave plant being baked in huge pits in the ground.  The plants are then crushed to extract their rich, sugary juices.  Tequila is a form of Mezcal and comes from the Blue Agave plant (there are hundreds of different varieties of Agave plant) and has a smoother, less smoky taste. Wahaca’s tequilas are all 100% Blue agave and taste of vanilla, caramel and peppers.  Both plants need to sunbathe for up to 12 years before they have soaked up enough solar energy to produce the sugars to make the alcohol….so drinking them is like drinking sunshine in a bottle!

For all those that have ever had a bad night out on Tequila, we challenge you to discover the real thing at Wahaca.  With no impurities and made from 100% agave they are 100% delicious. Wahaca’s cocktails blend the best of our mezcals and tequilas with other Mexican flavours like tamarind, lime, hibiscus, grapefruit and mint.

We are very excited to see more mezcal-specific bars/restaurants opening. Mezcal is very dear to us, which is why we have started elmezcal.org. We would love to get your feedback on what is important to mezcal drinkers, and the things you think a tequila drinker needs to know in order to be converted over to mezcal.

What brands are you going to/do carry? How do you serve your mezcal? Do you have any special food pairings?

Hi Nate,

Thanks for getting in touch. I love the look of your website, it’s great to see a good quality resource all about mezcal, which seems to get so much less press than its blue agave brother.

For us getting people into mezcal is all about breaking down the pre-conceptions that so many people have. They think that mezcal and tequila are such low quality drinks, and they cn be so wrong. So we try to do a lot of education around the spirit, with tastings and talks from experts. We find that if people learn about how mezcal is made, and get to try the good quality offerings that are available, they fall in love with the drink.

We stock forever Oax and Del Maguay here in our bars, and would love to expand that in the future as more people get to know about mezcal and it’s amazing story.

We tend to serve mezcal straight or on the rocks if people prefer, and in fact we have struggled with finding cocktails that are right for people in the UK – I’m sure that will come one day though.

We like to think that lots of our small street food dishes go well with the mezcal, especially the smokey pork pibil taco and mackerel tostada.

We hope you’ll be able to come and visit our bars some time soon and thanks again for taking the time to write in.

Cheers,

Oli

Hey all,

I checked out elmezcal.org and the information is good but I’m trying to find where to buy. I’m looking for a particular mezcal that I tried in Texas. It’s called Wahaka and is probably as good as Del Maguey (but comes in a better bottle!). Can’t find it anywhere, but they said they only started exporting this year.

Is this site affiliated? I’ll be in the Docklands next week.

Hi Ted, Thanks for getting in touch and for letting us know about Wahaka Mezcal. There’s no link between us, and in fact we hadn’t heard about it before. It looks great.

Good luck in trying to track it down and please do let us know if you find it in the UK. You could try asking in Gerry’s on Old Compton Street, they have a huge range of spirits, and would probably know where to start looking if they don’t have it themselves.
