<p>We met up with our friends at Bibendum Wine last night to try and create a new hibiscus flavoured Prosecco cocktail.  After a couple of tastings prior to this we we had settled on the delicious &#8220;Desiderio Jelo&#8221; Prosecco to help us on our quest.</p>
<p>We first of all stewed some hibiscus flowers and left them to marinate in their own syrup.  We then took the flowers and syrup and put in a champagne flute and added the Prosecco.  The result&#8230; was incredibly disapointing!  The flowers seemed to take all of the bubbles out of the Prosecco leaving a tasty, yet flat Cocktail.  The flower also looked a little bit lifeless in the glass unfortunately!</p>

<p style="text-align: left;">Next we decided to just create our own hibiscus syrup from cooking the flower and then discarded the flower.  We mixed the fresh syrup with the Prosecco and the result was glorious.  A really fruity, berry tasting Bellini which we brought a smile to all our faces&#8230; now we just have to find a suitable flute to serve the Bellinis in and we will get it on our Winter menu due at the beginning of October.</p>

They&#8217;ve arrived! We have just received our first batch of British grown Serrano Chillies which can be tried at Wahaca in our Tomatillo Salsa and Salsa Fresca as of today. Wahaca commissioned Joanna from Cherwood Nursery in Bedfordshire to grow Serrano Chillies especially for us – so that we could source local ingredients whenever possible.

<p>They&#8217;ve arrived! We have just received our first batch of British grown Serrano Chillies which can be tried at Wahaca in our Tomatillo Salsa and Salsa Fresca as of today. <p>Serrano’s have a very fresh grassy flavour and are used specifically to make the Tomatillo Salsa/ Salsa Verde in Mexico. They originated from the Mountainous regions in Mexican states of Puebla and Hidalgo so it is a massive achievement to have them grown so close to home.</p>

This included a promise to buy from suppliers and producers who share our respect for the environment, and have passion and integrity for their products. Our meat is sourced from British farmers who we know and trust. Our fish is sustainable and ethically sourced. When it comes to food we always ask ourselves a simple question, &#8220;Can we get the same quality, closer to home?&#8221;. Often we will pay more just to do so.</p>
<p>Our search for partners who shared our ethos has brought us into contact with some great people, from chilli farmers in Devon to glass blowers in Mexico. They, like us, strive to get the best possible product to the consumer at a price that is fair for everyone.</p>
<p>So in this section we are going to showcase the great work that our suppliers do.</p></div>
